Ok, I know, I'm about two days late, only because I was stranded on an island where there was no WiFi (Not complaining here) but . . .

Pancake Day!!! Or Shrove Tuesday. I love pancakes! I love eating them & making them! Usually I make the traditional simple recipe pancake batter using flour, eggs, milk & sugar but since I’ve gone into working out a lot and watching what I’m eating, I found this awesome protein filled, flourless recipe. It’s more of a crepe that I made but I guess you can make them as big or small as you please. Here are the ingredients that I used to make these beauties but you can change ingredients, because that’s what I did:

  • 1/3 soya milk
  • 2 eggs
  • 1 egg white
  • 2 tbsp hemp protein powder
  • 2 tsp chia seeds
  • 1 tsp coconut oil
  • honey
  • strawberries (optional)
  • pumpkin seeds (optional)
  • cinnamon (optional)
