Roaming through mum's amazing garden I found some awesome homegrown goodies, strawberries, radishes, salads, herbs, carrots & rhubarbs. Rhubarbs don't really have much beneficial uses & it's definitely not everyone's favourite but I remember eating it raw as a kid, dipping sticks into sugar (can't eat leaves) & having it as a sugary snack with a tad of sourness. I wanted to make something sweet, to have after a meal & this is what I came up with.
I wanted to make something sweet, to have after a meal & this is what I came up with:
- rhubarb (cut up)
- peanut/almond butter
- natural yoghurt
I didn't want to use sugar so used honey instead to get rid of the sourness. Put cut up rhubarb slices into a pan with a little bit of water & stew it until soft. Add honey, peanut/almond butter & cinnamon until you like the sweetness of it, this part is totally personal. Then dish it out, put some yoghurt on top with berries & sprinkle some more cinnamon. Enjoy it hot or cold, as a snack or dessert. I even tried crumbling digestive biscuits on top to make it more like a crumble, made in a pan. Super quick & easy!
